Bread Machine Brioche Buns. 1 cup water. 3 tablespoons milk. 1 Tablespoon active dry yeast. 2½ tablespoons sugar. 1 large egg. 3 cups bread flour. 1/3 cup white whole wheat flour. 1 teaspoon salt. 2½ Tablespoons butter, softened. Add the warm milk, sugar, and yeast to the bowl of your electric mixer. Whisk together on low; set aside at least 5 minutes or until slightly bubbly or foamy on top. Add the room temperature eggs and beat on low just long enough to combine, about 30 seconds. Add the flour, all at once and sprinkle the salt last. Place water, eggs, oil, vinegar, flour, xanthan gum, salt, sugar, and yeast, in that order, in a bread machine. Run Basic cycle and select Light or Medium for the crust. Remove when cycle ends. Cool completely before slicing. In a large bowl, mix the the flours, xanthan gum and baking powder together. Note: don’t forget to add salt if using unsalted butter. Then add the butter (melted in the microwave first – about 30 seconds) as well as the egg and frothy yeast mixture and mix with a spatula until smooth and lump free.
Give the bun a few pats to shape it and put it on a greased pan. (Parchment paper works fine too.) Cover the buns with a clean, lightweight kitchen towel and let the buns rise for half an hour. Then remove the towel and put the buns in a 375-degree oven for 15 to 20 minutes. Move the cooked buns to a rack to cool.
Allow the dough buns to almost double in size and then using a piping bag with a nozzle to suit the thickness of cross you wish to apply, pipe crosses on top of the buns. Then spray with the prepared glaze. If you do not have a spray bottle brush with glaze prior to crossing. Turn oven on to 180°C. If oven is slow to heat up allow 10 minutes
